Bruschetta

Buschetta is a wonderful summer appetizer and I'm lucky enough to get fresh tomatoes from my mother-in-law's garden, so it is 100% organic.  This is a simple dish to make and when served it is a delight to both the sight and taste buds!  Bon appétit!



Ingredients:
-2 tomatoes
-1 garlic clove
-1 small red onion
-fresh basil
-4 tablespoons of olive oil
-2 tablespoons of balsamic vinegar
-salt & pepper
-1 baguette




Instructions:
-cut up the tomatoes into cubes, garlic & onion to be finely diced and fresh basil cut into small pieces
-mix the tomatoes, garlic, onion and basil in a bowl, add olive oil and balsamic vinegar and top off with salt and pepper to taste.
-cut the baguette into 1/2 inch slices and cut on the diagonal
-top each slice of baguette with the tomato mixture and serve immediately


Optional:
-baguette slices can be toasted prior to adding the tomato mixture
-each bruschetta can be topped off with a dallop of goat cheese









Warning:  If you are planning a romantic dinner, I would skip this recipe, as the garlic and onion really lingers on the breath!
